Spinachi Pasta Sauce
Ingredients –
- One bunch Broccolini
- 100gm Spinach
- ½ tbsp. garlic
- 1 tbsp. butter
- ¼ cup white wine (any will do)
- 150ml cream
- 1 tbsp. pumpkin seeds
- 2 tbsp. parmesan cheese
- Salt and pepper to season
Method –
- To create a spinach puree, blanch your spinach in boiling water for roughly a minute, then blend in a food processor until smooth.
- Start your pasta sauce by melting your butter in a pan, then cooking your garlic in the butter.
- Add your broccolini and saute for roughly two minutes, then add your seasoning.
- Next add your white wine, and cook off the alcohol.
- Then add your cream, and reduce for three minutes until the sauce is thick and creamy.
- Add your spinach puree to create the rich, green colour.
- Next add your pasta and stir through, then add your parmesan.
- Time to plate up, add some extra parmesan and your pumpkin seeds to garnish.
