Spinachi Pasta Sauce

Ingredients –

  • One bunch Broccolini
  • 100gm Spinach
  • ½ tbsp. garlic
  • 1 tbsp. butter
  • ¼ cup white wine (any will do)
  • 150ml cream
  • 1 tbsp. pumpkin seeds
  • 2 tbsp. parmesan cheese
  • Salt and pepper to season

 

Method –

  1. To create a spinach puree, blanch your spinach in boiling water for roughly a minute, then blend in a food processor until smooth.
  2. Start your pasta sauce by melting your butter in a pan, then cooking your garlic in the butter.
  3. Add your broccolini and saute for roughly two minutes, then add your seasoning.
  4. Next add your white wine, and cook off the alcohol.
  5. Then add your cream, and reduce for three minutes until the sauce is thick and creamy.
  6. Add your spinach puree to create the rich, green colour.
  7. Next add your pasta and stir through, then add your parmesan.
  8. Time to plate up, add some extra parmesan and your pumpkin seeds to garnish.
